First and foremost, last night I was doing a little late night cleaning of my inbox (yes, I probably should have been working instead…I procrastinate…I know it’s a problem), and I stumbled upon an email from the folks at Vitalicious!
Okay, so I’ve been obsessed with everything pumpkin lately – pumpkin bread, pumpkin muffins, pumpkin pancake and waffle mix, pumpkin butter… You name something pumpkin related and I’ve probbbably craved it. Well, the smart cookies over at Vitalicious totally get me (and a ton of others, I’m sure), and THIS little gem popped up in my inbox:
Pumpkin Pudding Vitatops!!! Umm….yummy!!
The recipe (courtesy of Vitalicious, obv) is so simple.
- 12 MultiBran VitaTops
- 1/2 cup pumpkin puree
- 1 pack of fat-free vanilla pudding
- 5 oz. Cool Whip Lite®
- 1/8 cup finely chopped peacans
Place MultiBran VitaTops in toaster or heat in the microwave for 20-25 seconds.
In a large bowl, mix pumpkin puree and vanilla pudding together.
Gently stir in Cool Whip Lite.
Spoon Pumpkin Pudding Mix on top of each MultiBran VitaTop.
For the finishing touch, sprinkle finely chopped pecans over the VitaTops. Serve and enjoy!

Alright, on to my food. Last night, I was up late working on my paper (and apparently cleaning out my inbox). I got a craving for something crunchy, so I made myself some spicy cocoa dusted popcorn and munched away as I worked (or procrastinated).
I got a pretty decent sleep in, but this morning I definitely needed my java to get through my first class.
Skinny hazelnut goodness. (I really need to buy myself an espresso maker so I can start making these at home instead of buying them…).
Got through class, trekked home and immediately made myself a bowl of … what else? Greek yogurt from Trader Joe’s, honey, sunflower seeds…and to mix it up a little, half of a banana.
I’m still munching on it, and boy, is it delicious. I’ll give myself a pat on the back here. haha 🙂
Now, I’m relaxing til about noon, and then buckling down and getting some more stuff accomplished for school. I will be happy when this week is ovahh! haha 🙂
