I'm on a BUS!

Afternoon lovelies! Hope you are doing splendidly on this gorgeous Friday afternoon! I hope it is as beautiful out where you are as it is in Boston right now… unfortunately even though it’s beautiful out, I am writing this post from…. a bus. haha

I’m on a BUS! Reminiscent of “I’m on a BOAT!” – Oh Andy Samberg, how I love you.

I had fully planned on writing a post after I got home last night – even though it was late. However, I ate and CRASHED…it was probably for the best though. I slept like a little babe. My schedule for the summer will be probably end up with me posting later on Tuesdays and Thursdays – as they are busy, busy days for me.

I’ve eaten lots of goodies as of late.

Salad with berries has dominated my life – no complaints from me as it is delicious. “Yeah, because fruit is the new crouton” – Can anyone name that movie quote?

Of course, coffee has been ever-present  – as well…like we thought that would just disappear.

Last night, when I got home – I was stahhhvin. I had munched on a couple of Lara bars throughout the afternoon – um can we talk about how unbelievable peanut butter cookie is?? Why I didn’t go straight for the PB, in the first place, I have no idea – so unlike me. haha

Anyway – dinner. I through a bunch of frozen veggies into a pan along with some tempeh – got those suckers nice and toasty and then added barbecue sauce…because we know how much I love barbecue sauce.

That put me into food coma mode – dinner and a dessert of some Mighty Maple (by the spoonful, of course) and I was headed off to dreamland.

Overnight oats this morning. Maple/Vanilla/Cinnamon/Banana goodness. It’s a lot but it works.

On another note – I read an interesting e-mail from the folks at Eat This, Not That the other day – I get them everyday, but this interested me more than most. It was a list of the 13 best things to have in your pantry.

  • Lara bars
  • Oats (they chose instant – I’m not with them on the whole instant thing)
  • Garbanzo beans
  • Quinoa
  • Maranatha Almond Butter
  • Tuna
  • Flour
  • Pumpkin Seeds
  • Chipoltle Peppers in Adobo
  • Artichoke Hearts
  • Avocado Oil
  • Dried plums (aka pruuuuunes)
  • Dark DARK chocolate (obviously this is my fave on the list)

What are the staples in your pantry/cabinets?/ Is there anything you would add to or take off of their list?

Mine are definitely nut butters, oats (steel cut and whole grain rolled), garbanzo beans, other types of canned beans, canned soups (though the ones I have currently are ones that I will probably never eat), dried fruit, pudding mix, rice and nuts. Though that’s probably not inclusive to everything that I have in my cupboards right now. haha

  1. eat this not that has some good advice and some that I disagree with. it is helpful when they explain their choices, though. lara bars would definitely be on my list. SALSA! always, always have salsa

  2. I already have most of the stuff on that list in my pantry- my two favorites are dark chocolate and the almond butter, of course! And I’m with you on the PB Cookie Lara flavor, they’re amazing! Hope you have a wonderful weekend love!!

  3. haha, that video is hilarious. i just re-watched it the other day with my bf. loooove it.

    i am always shocked at how good each new larabar i try is. my favs were the cashew and pb ones but then randomly i tried the tropical one and it was AMAZING!!
