I’ve been on a kick of remembered little “diet” stuff from way back when…and while yes, they have definitely been recipes that found their way into many a fad diet…it doesn’t mean that they are no-nos orrrrr that they can’t be delicious, right??
In comes the “sub” for mashed potatoes – cauliflower…now, for me – it’s not a sub, I love mashed potatoes – it’s just a different side dish all together. It’s not about carbs = bad as many of those fad diets used to shove down our throats. I just…like cauliflower…especially roasted.
Anyway – pop those suckers in a hot oven until they’re tender with a little olive oil spray and some salt…delish.
So I combined the roasted cauliflower with a little bit of garlic seasoning, a little more than a tablespoon of margarine spread, a tablespoon of milk, 1/4 cup of veggie stock, a little more salt – and blend.
I left mine with a little texture, but adding a bit more liquid would definitely smooth it out.
This would be great with added cheeses or herbs or sour cream or … bacon. haha 🙂
