A Wintery Mess

Evening my loves! I hope you are all well — and that the weather is less crummy where you are than it is here!!

Ick.. haha. I awoke to the sounds of plows and shoveling — but I don’t really mind that considering I’d rather be woken up by someone doing the shoveling than actually having to do the shoveling myself. haha I crawled out of bed and made myself another hazelnut latte. This one was easy because my espresso maker makes more than enough espresso for my needs and one drink – so I always pour the rest into another glass ..stash in the fridge and nuke it the next day (or I could use it cold for iced…but I haven’t done that yet).

After some perusing of the Internet and checking of e-mail, I decided that it was time for breakfast. I decided to chop up a lovely organic banana (courtesy of Trader Joe’s) and 2 tablespoons of the cinnamon raisin swirl peanut butter by PB & Co. What a great combo. I like that the CRS is less thick than a lot of other peanut butters — so it went well with the banana.

I ate this while doing the essentials — you know…like going on Twitter.

I briefly went out during the afternoon to get some more essentials – and search for a grapefruit spoon or knife. No luck with the grapefruit utensils …but I did pick up some stuff that’ll eventually be good eats…once I tear into them. haha

When I got back, I was cold, wet and so ready for lunch. I made myself a cup of tea, and proceeded to heat up some of the split pea soup (told you I had a ton! haha). I have gone through exactly half of it…so by next week, it’ll be dunzo. haha

As you can tell, my new “spot” for picture take is at my desk. haha

I had picked up some fresh parsley on my journey that afternoon — why not, right? so I topped off my split pea soup with some…nice color and tasty!

Later I snacked on a little of this good stuff (Dark Choc. Dreams):

I hung out inside for the rest of the day — it was just nastayy out. At around 6 someone’s fire alarm went off, so I kind of just stood in my doorway seeing what the heck was going on — the whole building one wasn’t going off…but their alarm went off for  a LOOONG time. Once I was sure I could safely make dinner…I did. haha

Brown rice mess — oh, how I’ve missed you! It’s been a while, right? It’s seriously so simple, but it’s so good — and you can always spicy it up with other ingredients.

This is really the simplest version of it — a lot of the time I add frozen veggies to it.

First, nuke (or prepare…I just happened to have a ton of precooked brown rice on hand) brown rice. I usually use approximately 1 cup.

2nd: Add the salsa of your choice. Tonight — I chose Pineapple Salsa. Yumm. — I’m never sure on the exact amounts of this…it depends on your salsa and your tastes, I just see what I think looks good – and if I want more I’ll add it later. Nuke again for about 30 – 45 sec.

3nd: Add a wedge of your fave flavor of Laughing Cow — I just usually use LC Lite Original flavor. Nuke again for about 45 sec. (I microwave them in stages just so I don’t have a salsa explosion in my microwave..messssy).

Voila! Mix and enjoy (I added parsley just for the hell of it)

Coups & Soups

Evening everyone!! Happpy Friday! 🙂 Well…at this point — HAPPY WEEKEND!

Today was a productive day. I was up verrrry early because I fell asleep extremely early last night. I think I fell asleep around 8:45 or 9 — which meant..BING at 4:15 I was wide awake. I made myself stay in bed until 5:30 because I was hoping I would fall back asleep.

I got up, and before anything — tuned into my OnDemand and did about 25 minutes of yoga. It was glorious.

After that I cleaned up (aka took a looong shower) and made myself some tea. I checked up on some e-mail and blogs that I had missed falling asleep so early, and just relaxed on the couch for a while.

I put together a list of everything I needed to get done today — and thought about the best possible way to get all of those things done with the least amount of travel. haha I needed to pick up a book at the bookstore, go grocery shopping at more than one grocery store (love Trader Joe’s but there’s always a few things that they just don’t have), etc. etc. etc.

I got a move on around 10-ish (I relaxed for a while, k?? hahaha), and made a quick stop into my fave haunt – Starbucks – and got myself a venti Skinny Hazelnut Latte (you know how I do)…I got it free with a coup they sent me. Woohooo for a coup and no drink size limit!! I first went to the bookstore to pick up the very last textbook that I needed. It was an ordeal and they couldn’t find it at first — but I have it now…I have TOO many books this semester — oyyy.

I felt no shame taking this picture while waiting for the T — there are many people doing weirder things that taking pictures of their coffee. haha

Anyway, while at the store – I decided to make a trip into Whole Foods — seeing as it was riiiight there. 🙂 I perused the aisles, and stumbled on some Cinnamon Raisin Swirl by Peanut Butter & Co. (I was looking for Mighty Maple..but I can’t find it anyyyywhere!). I haven’t tried that flavor before, and it was on “special” — so it was cheappoo. I said, “Why not?!” I also picked up some split peas and some sushi to soothe my hungry tummy.

I haven’t tried it yet – hope it’s good.

The wasabi I added post paparazzi attack was a good solution to the sinus issues I’ve been having. haha

After noshing on the delish sushi, I headed to Trader Joe’s – where as always – bargain mania. They had rearranged the store since the last time I was there so I must’ve looked like a lost puppy wandering around. haha I came away with a damn good haul or fruits, veggies, milk, flax, uhh…what else did I get? haha Either way — my fridge now has food in it where as before — it had a Brita, champagne, Smart Balance and that’s it. haha

A full fridge is a happy fridge — okay so it’s not all that full…but I am only one girl! haha And a lot of my stuff doesn’t need to live in the fridge. 🙂

This evening I set to work making split pea soup. Nom. It came out pretty good — I didn’t want to add bacon or ham so I subbed in some curry powder for a smokier taste. Yum. I also added spinach — nutritious and it makes it look a heck of a lot more appetizing. haha Dollop of Fage for fun.

I’ll be eating this fooo-eva. It made so much. haha

Hummus is Yummus

Hola everyone, how are you?

Today’s been a pretty good day. I slept in…it felt glorious, as it always does. I woke up and made myself a cup of coffee and my usual yogurt mess. I knew I’d need to gear up for my day of studying ahead.

The day started out nicely…the weather went from a beautiful blue sky to grey. As much as I love gorgeous weather, I was happy to see the grey because, honestly, I’m much better at studying when beautiful weather isn’t calling to me. 🙂 Just as I settled into my studies, my fire alarm started beeping…no I wasn’t burning anything. haha The battery decided to die…haha So I got up changed (because Lord knows I was a mess) and ran to CVS for the battery, and while I was out I also stopped at Trader Joe’s for some stuff that I could remember from my grocery list.

When I got back, I fixed the detector, and made myself some popcorn, and heated up my cup of coffee that I had not had the chance to finish, yet.

After that, I got down to business again. When I was ready for a break, my friend actually messaged me and asked me to do some eBay-ing for her, while she was at work. Of course, I agreed, and well, I won it for her. Oh yes, I rock. haha :-p

After that I was inspired to be creative…in the kitchen. I decided it was TIME. Time to take my new food processor out for a spin. No pun intended. haha I decided that I would make hummus.

Some of the recipe was eyeballed – but it was pretty basic.

  • 1-2  cloves of garlic (I’d personally go for less than the 2 next time, however)
  • 1 can of chick peas (drain and reserve the drained liquid)
  • 2-3 tablespoons of tahini
  • The juice of 1 lemon
  • Salt and pepper, to taste
  • Hot sauce, to taste

I really like how this came out. Smooth…and no need for oil! 🙂 It might be a little bit too garlicy (nothing horrible though, my cloves were just pretty big) so I might reduce the garlic a little next time. Overall, I’m really happy with how it came out!!

I chopped up the garlic prior to putting it in the food process so it would really get pulverized.

I put the garlic and the chick peas in the food processor together.

The chunktastic puree that was produced haha.

After that, I added the everything else to the mixture (tahini, lemon juice, salt, pepper and hot sauce).

I love hot sauce. 🙂

THIS, my friends, was my finished product. Smooth, creamy, has a little kick and very yummy.  Very happy! I cannot wait to try out new flavors and whatnot. 😀

*Oh, to add…I did add 2-3 tablespoons of the chick pea liquid to smooth it out at the end!

I based my own recipe on a recipe of Ina Garten’s which didn’t include oil. Although yes, extra virgin olive oil is good for you, I wanted to see how it would turn out without the added fat. — Result: Really good. 🙂

Now, after going through all the trouble to make that hummus (okay, it was no trouble at all, it took maybe 10 minutes max, haha), I HAD to include it in dinner, right!? I baked myself up a sweet potato, and added a dollop of hummus, hot sauce (yes, more) and seasoning to that bad boy.

I also had some corn and string cheese (not pictured).

An elegant meal, right? haha

FYI – I just want to add that I do not post everything I eat…just because it would take me forever. haha

I’m off to study my booty off some more! Mon examen français est demain à 8H. Oyyy. haha (Translation: My french exam is 8am tomorrow morning.)

BuzzBuzzBuzz

Evenin’ folks! Today’s been a busy day! 🙂 I was almost eaten by an elevator at about 8:20 this morning…haha. Seriously, okay most elevators, if a person is in the way of a door will automatically stay open..nope, not at my school. Apparently they like to squash you like a bug. haha I’m surprised no bruising. haha

Either way, aside from almost being eaten by a metal box, today’s been good. haha I came home from my first class and made myself a big ole yogurt mess. 🙂 You know the usual. Unsweetened NF Fage, flax seeds, sunflower seeds and honey.

Man my legs are sore from my run yesterday — I did a lot of speed walking today (although, I’m beginning to think that “speed walking” is my normal pace…). This afternoon, I had some Green Goodnesss in a wine glass (everything tastes better in a fancy glass!! hehe), and a cheese stick and hummus & popcorn (all undocumented unfortunately).

Tonight, after my night class, I went to a lecture (for extra credit) given by a professor about Selfishness (it had a lot to do with bees and beehives? buzzbuzzzbuzzzzz!!). It was interesting…I’m glad I went, for the extra credit, but yeah…it was lacking in my opinion. Either way, I got home and nuked the very last of my rice (not the new batch) and added some salsa and Laughing Cow Light. Oh, and some spinach, too!

Nothin but blue skies…

Bonjour!! Today is absolutely gorgeous out!! Seriously, all I can see are blue skies out of my window..well, that and an awkward antenna that’s on the roof of the building across the street.. 🙂

This morning…getting out of bed was difficult. I guess I should have anticipated it, considering it’s a Monday — but I thought I would have gotten enough sleep last night. I guess there just isn’t such a thing as “enough sleep” for me. haha

I didn’t have time for coffee this morning, but I did get enough sleep not to neeeeed the caffeine boost. (Woo!) haha Class was alright….we have this girl in our class who is…well, VERY spoiled. It’s just painfully obvious that she’s been handed everything, and has been able to talk her way out of doing a lot of the work.  Anyway, so she has missed probably 2 months worth of classes (yeah, we’re in month 3)…and she somehow expected to pass the course with flying colors (she literally said that). And then she got into a shouting match with the professor when the professor told her she needed to drop the course or she’d fail. Uhh..honey, I’m sorry but NO ONE even if they got 100 on every assignment, would pass a course having missing 90% of it. It’s kind of one of those “who does she think she is??” type moments. uhg. Anyway, that was my little dose of “gossip” this morning. haha

I grabbed a pumpkin chocolate chip muffin on my way home, and that has been my meal this morning. haha

So delicious. Perfect…though not really healthy (I’ve been bad lately).

I don’t have a ton to do today (thank goodness) so I think I’m going to make myself a cup of tea, and just try to relax and recoup. My bod is still really stiff so maybe some yoga is in order.

My dad…and his wife… are coming into town tonight so we’re all (including my bro) going out to dinner. We’ll see where we end up. My dad’s wife is probably the pickiest eater…ever. She just doesn’t try new things. It’s one thing to not like things, but my approach to food…is at least try it once.

Somethin' to chew on…

Oh my, it’s 8pm already?? Ahh, Wednesdays always fly by. Today has been a good day. Lots of productivity!! 🙂

Again, the beginning of my day started out shaky — I think I just have been easily dehydrated as of late. Instead of my usual coffee, I decided on getting some tea this morning so that I would be getting some water into my system, instead of milk. I stopped by the local Derne St. Deli and got a tea – to goooo. 🙂 I’ve heard their food is delicious, I’ve just never had it…it sure did smell good in there though. I’ve been hydrating ever since. It really is amazing how much better you function (body and mind) when you are hydrated.

On my way home, I picked up the latest issue of In Style (the one with Reese Witherspoon on the cover) in order to do a little “research” for my advertising class — aka I needed an excuse to look at pretty clothes I can’t afford. I was pleasantly surprised to open up the magazine and see THIS advertisement.

Oh and so you know — the text says: PHOTOGRAPHER: Captivated –STYLIST: Jealous – MODEL: Flattered, but not surprised

Honestly, I was surprised to see it — especially in a magazine mostly devoted to style, but it made me really happy. Why? Because she is beautiful, and God knows that young women need to see that people…BEAUTIFUL people…come in all different shapes and sizes. I read an article yesterday (which I’ll admit, I found due to a “tweet”) about how 19 out of 20 young women would switch bodies with someone else if they could. I just found that so sad…and believe me — I’ve been there. Heck, there are days when I’m STILL there. There are days when I look at the mirror and say “ICK!” I still struggle with the fact that I am a woman who is 5’10” (yeh, I’m tall). — My body isn’t where I want it to be, but you know what, that doesn’t mean there is anything wrong with it though!! This society (not just in the US, but it’s really almost universal in Western culture now) projects these unattainable, airbrushed images of women…I cannot imagine being a teen girl today. It was hard enough for me 10 years ago (eeps, I was 13 that long ago?? haha).

I spent the afternoon perusing the magazine, sipping Green Goodness, enjoying greek yogurt, flax, sunflower seeds and honey, and munching on popcorn and hummus

I love Cedars. It’s somewhat local. I drive by the headquarters on my way to my mom’s house and to my dad’s house, too, actually. haha

After class, I came home and immediately put some sweet potato fries in the oven and made myself some brown rice, salsa, Laughing cow, corn and spinach.

Oh, and last night, I made that concoction of vanilla pudding with some creamy honey peanut butter mixed in. Oh. My. GOODNESS!!! SOOOOO GOOD! That’s my dessert tonight, again. haha Seriously, only about a tablespoon of PB went into the entire batch of pudding — it’s the perfect peanut butter flavor. Yummm.

Spooktacular Weekend

Gooood eeeeevening *in dracula voice…* haha How’s everybody doin? I hope well! Happy Weekend and Happy Halloween! haha I have managed to mostly avoid candy, which I’m happy about. The stores were CRAZY today. I wasn’t even in “Halloween” stores and they were ridonculously  busy at like 3:30pm.

I ended up napping for a couple of hours this afternoon – I did NOT sleep well last night. I drank tea too close to bed, and couldn’t sleep — then I had some pretty gnarly dreams. Perhaps its the scary crap on tv, but they were not pretty.

Anyway, this afternoon, I made myself some Trader Joe’s Pomegranate White Tea and had some tabbouleh for lunch. I got it at Whole Foods this morning. I was torn between the tabbouleh and a quinoa salad…but they added sugar to the quinoa salad so I went with the tabbouleh.

I went out in search of some stuff to refill my fridge, and to use up a Borders coupon. I bought some more brown rice, some hummus, some flax seeds and some sunflower seeds. I also picked up “Barefoot in Paris” from Borders. I’ve always wanted the book; the recipes look delicious and the pictures are just gorgeous. Not everyday food, obviously, but special occasions…for sure!

I’m looking forward to adding flax to my meals.

When I got back, I immediately popped some popcorn and whipped out the Sabra that I bought. It smells like an everything bagel, yum. Honestly, I probably wouldn’t have bought this flavor normally, but it was literally the last Sabra left. It’s really good though.

For dinner I made my normal soy sauce, brown rice, chili paste, etc. mix, and I mixed in about a cup of baby spinach. Mmm, mmm good. I also made myself some more tea. haha I’ve been a tea freak lately, huh.

Now, I’ve got to go get ready and all that jazz. It’s my one night this weekend to do something, seeing as I work Sunday. haha
